Sorry, hon, but such a thing does not exist. Vegans, by definition, do not use leather. If your hubby uses leather, then he is a strict vegetarian, not a vegan.

There are plenty of great vegan cookbooks out there. I'm sure you could find one that he'd like, without killing a sentient being in order to produce it.
References :
Your dad and husband are vegans and you're still this ignorant/insensitive? Wow.

There 's no such thing as a leather bound vegan cookbook unless you take one and have it bound yourself.
References :
Ahh, yes. Simply hysterical. Perhaps if you actually have a vegan husband you should just stick to a normally bound book.
References :
Vanilla Custard Topped with Berries (Gluten Free)

1 block silken tofu
1 whole vanilla bean
1 cup brown rice syrup
½ cup maple syrup
2 cups of your favorite organic berries
3 tbsp olive oil

In a mixing bowl mix tofu with a mixer until smooth. Pour mixture into a sauce pan and heat, add ¾ cup brown rice syrup, ¼ cup maple syrup and stir until syrups are fully incorporated. Stir in vanilla and continue to cook for about 2 more minutes. Refrigerate for 2-4 hours before serving. When ready to serve, heat olive oil and remaining ¼ cup brown rice syrup and ¼ cup maple syrup in a saucepan. Add berries and cook to until sauce begins to become syrupy. Remove custard from refrigerator and top with berries.

Another great recipe to try is
Bananas and “Cream” (Gluten Free)

2 tbsp olive oil
¼ cup chopped cashews
3 tbsp maple syrup
3 bananas
1 teaspoon ginger
1 teaspoon ground cinnamon
1 cup vegan cream cheese (Tofutti brand; can get at Albertsons or Whole Foods Market)
1 teaspoon vanilla extract
1/4 cup maple syrup

Put olive oil and chopped olives in a pan and sauté. Add maple syrup until mixture begins to caramelize. Add sliced bananas and sprinkle with ginger and cinnamon. Sauté mixture for about 4-5 minutes and plate. In a small bowl mix cream cheese, 1 teaspoon vanilla extract and maple syrup together, pour mixture over top of bananas and serve.
References :
http://www.eatingvegan.com
