What do I have to add to a pumpkin cake mix in order to make it a Vegan cake?
Posted by: admin / Category: vegan cakeI thought maybe it will be easier if I just bought the cake mix instead of doing it from scratch. If you have any recipes for a Vegan Pumpkin cake you are more than welcome to leave it as an answer. Thank you!
Well first, make sure the cake mix is vegan, since most aren’t. Then, with most cake mixes you only need to add eggs, oil, and sometimes milk or water. I always get the best results using tofu or applesauce as egg replacer for cakes. That would be 1/4 cup firm silken tofu mixed well in a blender until smooth (I blend the whole package of tofu & measure out 1/4 cup after. It’s easier, and you can use the rest to make pudding or something after if you don’t plan on doing a lot of baking at once), or 1/4 cup plain applesauce. Since it’s pumpkin cake, you could use cinnamon applesauce b/c I’m sure the cake already has similar spices anyway. If it calls for milk, you can use soymilk or any nut/grain milk (almond, oat, hemp, etc.) but just use slightly less…maybe about two tablespoons less. I wouldn’t recommend rice milk. It’s much thinner than others & the taste can be really noticeable sometimes.

Ummm…You add whatever it says to add on the back of the box. You can omit the eggs, but it’s going to be flat and very dense.
